Plum jam
Overview
A simple jam for a summer drink. Take a spoonful of plum jam, add an equal amount of sugar or honey, brew it, and it will become a cup of fruity hot drink. Let it cool and add ice cubes to make it more sour, sweet and refreshing.

Soak green plums in salt water for two hours, using a ratio of 2 teaspoons of salt per pound of green plums to reduce the sour taste.

Add the green plums to boiling water and boil for five minutes. Then boil the green plums at a ratio of 1 kilo of green plums to 1 teaspoon of salt and boil for about five minutes.

Let the cooked green plums cool down (to room temperature) and remove the core in the middle.

Put the cored green plums back into the pot and add rock sugar. The proportion of sugar accounts for about 1/3 of the volume of green plums (the proportion of sugar can be adjusted according to personal preference). It is best to add 1/6 teaspoon of salt to 1 pound of green plums. The effect of adding salt is to make the flavor more mellow; otherwise, if you add sugar alone, the taste will be thin. After boiling, simmer over low heat for ten minutes. Bottling.
