Bitter melon, soybean and minced meat soup has a bitter, sweet, clear and moist smell. It has the effects of clearing away heat, improving eyesight and detoxifying. It is a soup that is used to relieve summer heat in Chaoshan area. It is also commonly used among the people to treat summer heat, polydipsia, heat boils, excessive prickly heat, and conjunctivitis. Growing up, I often ate what my mother cooked. Now that I'm married, I often do it myself. Sometimes I just want to go home.

Sprinkle the bitter melon with salt and marinate for more than half an hour.
