Sweet and Sour Pork
Overview
This is a dish that my wife and I love to eat. This was the first time I made it at home. It was highly praised by my daughter-in-law. I answered modestly: Our Heinz ketchup is the best ~

Prepare a piece of pork tenderloin

Cut into 8mm thick strips, add egg white, salt and cooking wine and marinate for 20 minutes

After marinating, put the tenderloin strips into a batter with a flour to starch ratio of 1:1, dip it in the batter and fry it in 70% hot oil. Do not put too much at one time to avoid sticking to the pan

After frying everything and controlling the oil, heat the oil until it is 80% hot, then add the tenderloin and fry until golden brown and take it out

Remove the fried tenderloin

Add tomato paste, sugar, vinegar and appropriate amount of water to make a sauce

Leave a small amount of base oil in the pot. When the oil is hot, add the sauce, turn to medium heat and simmer the sauce, stirring while it is simmering

When the sauce boils and bubbles form, add the fried tenderloin and stir-fry until all the tenderloin is evenly coated with the sauce and serve
