Overview

Madeleine cakes are relatively simple to make, but the finished product has an extraordinary texture. Take a bite, and in addition to the egg roll-like crispness on its slightly burnt edges, it is also soft and fragrant, with a refreshing fruity flavor. It is a wonderful enjoyment. Looking back on the past few posts about Madeleine, I think we can almost make a Madeleine series.

  1. Use a large bowl to beat eggs that are already at room temperature. Use a whisk to beat at high speed until foamy. Add sugar and vegetable oil. Beat again. Add milk and beat well at high speed.

  2. Sift low-gluten flour into a bowl, add baking powder, mix well and set aside. Add flour to the newly mixed egg liquid and beat at low speed. Turn clockwise and counterclockwise from time to time while beating. This is not the rotation of the rotor. It refers to the rotation of the whisk when you hold it. Take out the whisk, pour in strawberry cubes cut into the size of corn kernels, and stir evenly with a spoon;

  3. Preheat the oven to 365°F, spray baking or grilling anti-stick oil into each small mold, and use a brush to spread evenly;

  4. Pour in the batter until it is 70% full, put it into the preheated oven and bake for about 8-9 minutes. Turn on the oven light when the time is almost up. If the surface has become prominent and slightly yellow, it is OK. Take it out and let it dry for a while. Use a toothpick to gently pick up the small cake.
