This is what a friend brought to me when he returned to his hometown! If you don’t have ginger brown sugar, regular brown sugar cubes will work too!

When the longan meat starts to float on the water, we can turn off the heat and simmer for ten minutes!

Ten minutes have passed and we can put in the hard-boiled eggs that have been peeled! After the soup comes to a boil, simmer over low heat for another ten minutes and it's done! Be sure not to cook it for too long. If you cook it for too long, the red dates will be very soft and the longan meat will be very soft, so it will lose its taste! Ten minutes is just right! The longan meat at this time tastes crispy and delicious!
