Steps
-
Mix 160g cake flour, 80g water, 15g butter, and 1g salt, and knead into a smooth dough. Refrigerate to rest for 30 minutes.
-
Take the butter out of the freezer, cut it into large slices, place it between two pieces of plastic wrap and roll it out into large thin slices.
-
Sprinkle the rested dough with dry flour and roll it into thin sheets.
-
Place the refrigerated butter on top of the rolled dough
-
Fold the four corners to cover the butter. Be sure to pinch it tightly so the butter doesn't leak out. And roll it out thinly.
-
Roll out the dough thinly and fold it in quarters. Then place it in the refrigerator to rest for 20 minutes
-
After rolling it out again, fold it in quarters again and place it in the refrigerator to rest. Repeat this process three times.
-
Roll out the dough to a thickness of approximately 3mm, place on oil paper, and insert holes with a fork. Cover with plastic wrap and refrigerate for 30 minutes.
-
After preheating the oven to 200 degrees for five minutes, place the pastry on the baking sheet and bake in the middle rack of the oven for about 25 minutes. The temperature of each oven is different, so you should observe the heat and color, and bake until golden brown.
-
Wash the strawberries and dry them
-
Cut off the ends of the strawberries, then cut them in half.
-
100g whipping cream, 10g sugar, beat until not flowing. Be careful not to over-whip the whipped cream.
-
Cut off any irregular parts of the puff pastry and cut into long strips.
-
Put the whipped cream into a piping bag and pipe it onto the pastry.
-
Arrange strawberries and fill with whipped cream. Repeat twice, finally covering with the third layer of puff pastry.
-
This can be taken out and shown off.
-
Warm color, sweet taste.
