Crispy and Tender Fish Dice
Overview
This year I saw some good Nanwan fish fillets sold in the supermarket, so I bought a few pieces. Nanwan fish is a specialty of Nanwan Reservoir in Xinyang, Henan Province. This fish has delicious meat and is very popular here. I picked a few pieces of thick meat and prepared to make a crispy and tender fish salad. The deep-fried diced fish has a crispy outer skin and the fish meat inside is very soft, tender and fragrant. Paired with salad dressing, this is my son's favorite way to eat it. This dish is a private dish, mainly due to the deep-frying technique, which must be high temperature to lock in the moisture, and the accompanying sauce. Parsley and chopped tomatoes are added to the regular salad dressing to make the sauce rich and fragrant. When eaten with diced fish, it has a unique flavor, crisp, tender and delicious.

Today I did what a lazy person does and bought marinated fish pieces directly

Cut off the thick part of the meat, being careful to avoid fish bones when cutting.

Put cornstarch and flour into a bowl in a ratio of 2:1, and add an egg white

Add appropriate amount of water and stir into batter for fried fish

Add the oil to 70% hot oil and fry until it changes color, then return to 70% hot oil and fry again for half a minute. The oil temperature must be high so that the fish meat does not lose too much water and achieves the effect of being crispy on the outside and tender on the inside. If the oil temperature is low, the fried fish will not be tender enough.

Take an appropriate amount of Kewpie salad dressing, chop parsley, chop tomato meat and put it into the salad dressing,

Stir well to form a compound salad dressing. Peel and remove the seeds from the tomatoes, leaving only the flesh. This will ensure the taste and consistency of the sauce.

Serve the fried fish with the sauce and just dip it in when you eat. You can also mix the sauce and diced fish evenly before serving, but eating it as a dip can maintain the crispy texture on the surface of the diced fish.
