Flammulina velutipes contains relatively high zinc content, and it can also promote children's intellectual development and strengthen their brains, so it is called wisdom-enhancing mushrooms. Parents, you can feed your children more enoki mushrooms, that would be smart~~~ Unfortunately, my daughter is only over one year old and can’t eat them yet.

Cut off the roots of enoki mushrooms and wash them.

Pour water into the pot and bring to a boil, blanch for about 1 minute, remove and drain. (Don’t blanch it for too long, otherwise the color of the enoki mushrooms will change)

Put the blanched enoki mushrooms into a bowl, add light soy sauce, soy sauce, and sugar and mix well. (Note: I chose Totole soy sauce)

Chop the shallots, add vegetable oil to the wok, add chopped shallots to the cold oil, and after the oil boils, fry the onions until fragrant and turn off the heat. Pour on top of the enoki mushrooms.
