Wash the chicken wings and drain the water, or dry the skin with kitchen paper.

Make two cuts on both sides, sprinkle with salt, black pepper, cumin powder, and Sichuan pepper powder, mix well, wrap in tin foil or plastic wrap, and let sit for 20 minutes to absorb the flavor.

(My mother usually uses a pan to fry slowly, and the hot oil droplets will jump around. I prefer to use a microwave, which is clean and smoke-free, and looks good.) Put it in the microwave on high heat for 7 minutes, let it cool for a while, take it out and turn it over, and cook on high heat for 7 minutes. If there is too much water, you can use medium-high heat for another 5 minutes, and bake until the surface is slightly brown. OK!
