Marinate the minced meat with cooking wine, a little salt, and starch. Peel tomatoes and dice onions and carrots. I peel the tomatoes directly.

Add a little salt to the boiling water and add the noodles. Cook for about 7-10 minutes. If you want it to be softer, cook longer. It seems difficult to cook it, so I cooked it for about ten minutes.

If you have two stoves while cooking the noodles, you can heat the oil in the pan and make the meat sauce. You can also wait until the noodles are ready and let them sit in the pot. Then start making the meat sauce. Heat oil in a pan and add marinated minced meat and stir-fry.

Stir-fry until the minced meat is cooked, then turn one side of the pan, then add minced onions, minced carrots and minced tomatoes to the other side and stir-fry.

Add two or three spoons of tomato paste, a small spoonful of sugar, a little starch water, and a little soy sauce. (Because the minced meat has been marinated with a little bit of salt before, sugar is added because tomatoes and tomato sauce are a bit sour. You can choose or leave it out according to your own taste. Personally, I think adding a little soy sauce will also enhance the taste. The meat sauce made is not inferior to the cooked meat sauce buns sold on Taobao.)
