First, sterilize the container with boiling water and dry it. All utensils must be water-free and oil-free. Weigh the rock sugar. It is best to use old rock sugar and beat it into powder. It is lazy, so put the rock sugar into the container as a whole piece.

The acidity of white rice vinegar is preferably less than or equal to 4%, so that the resulting fruit vinegar will not be too sour

Soak the apples in water with detergent for five minutes to remove pesticide residues on the skin, then scrub them clean and dry them with kitchen paper for later use. Knives and cutting boards must also be kept water-free and oil-free

Pour some vinegar into the container first, cut the apples into shreds, and put them in the container while cutting. Apples oxidize quickly, so don’t store them for too long

Then pour all the remaining vinegar in, seal tightly, label and date. Shake it once a day for a week and put it in a corner. It will taste better after three months. Remember to mix it with water
