Wash the pig's trotters, pluck them clean, and chop them into pieces. This step can be left to the butcher shop owner;

Put the pig's trotters into a pot and bring to a boil, blanch the blood;

While blanching the pig's trotters, wash the green onions, cut the white part into sections, chop the other half into chopped green onions, and shred the ginger;

Take 4 pieces of bean curd and a spoonful of bean curd juice;

Mash the fermented bean curd into puree and set aside;

Remove the pig's trotters and set aside;

Pour an appropriate amount of oil into a pot, add the pig's trotters and stir-fry over low heat to dry out the water;

Then add the green onions and saute until fragrant;

Pour in the cooking wine, light soy sauce, dark soy sauce and bean curd juice;

Finally, pour in hot water (or stock) that has not covered the pig's trotters, and cook on low heat for 1 hour. This is what I took when I opened the lid to check and take pictures. The water is not that little;

Cook until the juice is reduced, then add chopped green onion at the end;
