Fried Hsinchu rice noodles
Overview
I ate my aunt's fried rice noodles at my uncle's house before and fell in love with fried rice noodles. I don’t have to go to work today, so I made fried rice noodles for breakfast at home this morning.

Soak Hsinchu rice noodles in warm water for five minutes.

Cut the sausage into thin slices, chop the green onions and set aside.

Heat the wok, add a little oil, and stir-fry the sausage over low heat. When the oil comes out of the sausage, scoop it up and set aside.

Heat the oil from the stir-fried sausages, drain the soaked rice noodles, and stir-fry quickly. Mix light soy sauce and oyster sauce with a little water to make a sauce, pour in the rice noodles and stir-fry them, so that all the rice noodles are covered with the sauce. Continue to stir-fry quickly. If the rice noodles stick to the pan, add more oil and stir-fry.

Finally, pour in the stir-fried sausage, stir-fry for one minute, sprinkle with chopped green onion, stir-fry again quickly, and it's ready to serve.
