Mango Sago
Overview
Sago is one of my favorite desserts, but cooking it gives me a headache. After learning some tricks, it is much easier to cook sago. The trick is to soak or boil sago in hot water. Cold water will melt it; when it is cooked until the center is a little white, it should be passed through a cold river (soaked in cold water) to cool it down. After boiling again, turn off the heat, cover the lid and simmer for 25 minutes. The white spots will disappear and the whole sago will become transparent

Soak sago in boiling water for 20 minutes

Add 6 times the amount of sago water. After the water boils, add the sago and cook until the center of the sago is a little white. Take it out and pass it through the cold river. Pour the water several times

Put it back into the pot, add 2 tablespoons of sugar and sago, boil with the coconut milk that has immersed the sago in it to dissolve the sugar, turn off the heat and let it simmer for 25 minutes
