Banana and Dragon Fruit Cake
Overview
If yogurt cake is comparable to cheesecake, then I would say that this cake with banana is comparable to yogurt cake. The taste is a bit moist, full of banana smell, and the dragon fruit seeds feel like biting sesame seeds, hahaha... This is my own adaptation of the kitchen banana cake recipe, combining dragon fruit with banana.

Use a food processor to mash the banana

If you don't have a food processor, you can sift them with a spoon.

Put the egg yolk into the banana pitaya puree. Stir well after each addition.

Sift the low-gluten flour into the mixed egg yolk batter.

Add the sugar to the egg whites in three batches, adding 10 grams each time. For the first time, beat the egg whites until they form thick foam

The second time you add it, the egg whites begin to thicken

The third time to add is when the lines on the egg white are not easy to disappear

In a good state, the hook can be pulled out at a right angle.

Add the egg whites into the batter in step 3 in three batches, and turn it from bottom to top until it is evenly distributed. Do not draw circles, otherwise the foaming will be severe.

I laid oil paper on the bottom of the mold and poured the cake batter into it. I hope it will be easy to release the mold because I am not using a removable bottom mold.

Preheat the oven for 10 minutes, 170 degrees for 40 minutes.
