Add 1 tablespoon of vegetable oil to the pot, beat the eggs and fry into chunks. Set aside.

Add another 1 tablespoon of vegetable oil to the pot, add the tomato cubes and stir-fry the juice, add salt and soy sauce and stir-fry evenly.

Pour in appropriate amount of water and bring to a boil.

Add the noodles and cook for 2 to 3 minutes, until medium rare.

Add egg cubes and spinach segments and cook for 1 to 2 minutes.
