Wash the king oyster mushrooms and cut into thin slices vertically. (The King Oyster Mushroom is relatively large, so I cut it in half first and then cut it vertically into slices)

Spread the flour evenly on a plate, and coat the king oyster mushrooms piece by piece with a thin layer of flour.

Crack the eggs into a bowl and beat with salt.

Pour vegetable oil into a pan, heat over low heat, wrap the king oyster mushrooms in flour and then a layer of egg liquid and fry in the pan until golden brown on both sides, then serve on a plate.
