Overview

Strawberries grown in greenhouses always smell good but have no taste when eaten. I ate two of the newly bought strawberries and they didn’t taste good. I’m going to make sweet and sour strawberry jam. There are no preservatives or aromatics so I can eat it with confidence.

  1. There are about 1,100 grams of strawberries in total. Soak them in light salt water for ten minutes and rinse them twice with clean water. These are leftovers from making strawberry jam.

  2. The strawberries are relatively large and can be cut into three or two pieces. When frying, I think they can be cut into smaller pieces.

  3. Sprinkle an appropriate amount of white sugar and mix well with chopsticks. Depending on your personal taste, I don't put too much, about the same amount of sugar mixed with tomatoes. Cover with plastic wrap and refrigerate for a day to pickle the strawberry juice. (I planned to marinate it for one day, but the QQ candy was eaten by a colleague who was a guest at night, so I had to marinate it for another day. Fortunately, it had no impact)

  5. My pan is non-stick and is perfect for frying strawberry jam. Bring to a boil over high heat, and adjust the heat to medium-low. Remember to stir all the time, otherwise the edges will be covered with strawberry foam. Pour fresh lemon juice in while stirring. I was afraid it would be too sour, so I squeezed a quarter of a lemon.

  6. Put the lemon juice and stir for a while, then add two pieces of maltose. The white cotton-like thing is the melted maltose.

  7. Sprinkle a few grains of strawberry-flavored QQ sugar and stir a few more times to melt the QQ sugar. When it is cooked for 16 minutes, the strawberry particles are almost melted. If you cook it further, the fruit particles will become smaller.

  9. After cooling, bottle it. I don’t have a beautiful bottle, so I found two that contain fruit vinegar and yogurt. They look very beautiful.
