【Chocolate Banana Cake】Flame Wine Roasted Banana and Chocolate Cake
Overview
I often try to combine my favorite foods together. When you take the first bite, you may not be able to guess what they are. Then you taste the second and third bite curiously... sourness, sweetness, and slight bitterness on the tip of your tongue... you find that the original ingredients are so full of mystery! Then you must be the technician who casts the spell! Make bananas into sweet and delicate flame-wine-roasted bananas, add them to your favorite chocolate cake, and decorate with finely chopped chocolate strips. The sweet and passionate cake is now in front of you! You can also bake some beautiful biscuits for decoration, such as classic lace~~~ If you see too many ingredients and step pictures, you will shrink back. In fact, let me tell you a secret, they are just simple combinations and not difficult *A The cocoa base cake is the same as the original cake roll, except that 5g of cocoa powder is replaced in equal amounts *B Rum syrup can also be made into a base syrup without adding rum

Steps
-
Weigh ingredients A, separate the egg whites and yolks, mix and sift the powder, melt the butter, and grease the baking sheet with greaseproof paper
-
Add 20g of fine sugar to the egg yolks and beat until the color becomes lighter and set aside
-
Add the fine sugar to the egg whites in portions and beat until the dripping texture does not disappear quickly (before wet foaming)
-
Mix egg yolks and egg whites evenly with a manual whisk
-
Mix the sifted flour and add it to the egg batter, stir or cut and mix evenly
-
Drizzle the melted warm butter onto the spatula and fold into the batter
-
Slowly pour the batter into the baking pan, smooth it out and put it in the preheated oven at 200°C for about 15-20 minutes
-
After mixing 15g of fine sugar and 30g of hot water, let it come to room temperature and add rum to make rum syrup
-
Weigh the chocolate flavored whipped cream and flame-wine-roasted banana ingredients, peel the banana and cut into thin slices
-
Heat the pan over low heat, simmer the sugar into caramel color and add butter
-
Add banana slices. For convenience, please mash them during the stir-fry process
-
Add rum and ignite it to make the bananas taste delicious (it is best for men to do this, and you must be very, very careful about safety)
-
Cut the baked cake into three strips of equal width and length and set aside
-
Beat the light cream until it is evenly distributed (it will slowly drip from the front when you pick it up) and add the chocolate sauce
-
Beat until about 80% (no sticky feeling)
-
Brush the first slice of cake with rum syrup
-
Spread chocolate flavored whipped cream
-
Put the cooled flame-roasted banana into a piping bag and pipe it on top of the whipped cream
-
Spread the banana filling evenly
-
Lay out the third piece of cake, and spread the remaining whipped cream on the five sides (you can also use whipped whipped cream for decoration, I used chopped chocolate bars here and didn’t take photos of this step)
-
To make lace biscuits, prepare the raw materials: low-gluten flour and cocoa powder, mix and sift and set aside
-
Dissolve butter in water, add fine sugar, honey and stir evenly, add flour and continue stirring
-
Put it into a piping bag and squeeze out the pattern you want, then put it into a preheated oven at 180°C and heat it up and down for 10-12 minutes (the baking batter will spread out and form a honeycomb shape, so leave a certain distance)
-
After baking, take out the baking pan and let it sit for a while. When it is not hard, peel it off from the baking pan. Use a rolling pin to gently roll it up and let it cool completely
