Wash the Huyou, peel and flesh it. Marinate the peeled skin with salt for two hours, then wash and cut into shreds. The thinner the skin is, the better. Figure 2.
-
After cutting, wash twice, drain and set aside.
-
Put rock sugar in a cold pan, then turn on the heat.
-
Slowly melt the rock sugar, stirring constantly. Don't be impatient. If the sugar is too old, the whole finished product will be dark and bitter.
-
Add the chopped shreds.
-
Let it sit in the sugar pan until transparent.
-
Add the meat again.
-
Bring to a boil over high heat for about an hour and then reduce to medium heat, stirring constantly to avoid burning the pan. Turn off the heat when the juice is gone.

You can put it in a can after letting it dry for a while, but you don't have to wait until it is cool before filling it. When it is warm, the whole thing will be flat and there will be no gaps. This method can be put into the next year when making grapefruit tea.
