One elbow.

Debone the elbow.

Cut the elbow into large pieces and set aside.

Carrots and potatoes are also cut into large pieces and set aside.

Cut king oyster mushrooms into cubes and set aside.

Fry king oyster mushrooms until golden brown and remove.

Leave a little base oil, add ginger slices when the oil is 20% warm, stir-fry until fragrant, add star anise and continue to stir-fry over low heat. Stir-fry for a minute or two and the aroma will come out. Add garlic underneath.

Add the cut elbows and stir-fry until the elbows change color. You can also add sugar and stir-fry them to get the color. I don’t like the taste, so forget about it.

Add cooking wine, light soy sauce, dark soy sauce, salt, and dried chili pepper.

Add boiling water again.

Stir evenly and put into pressure cooker to simmer for 20 minutes.

After the pressure cooker is deflated, pour it into the wok and add the potato cubes and carrot cubes. Stir-fry over low heat until the carrots and potatoes are waxy, add the fried king oyster mushrooms and green peppers and stir evenly.
