Prepare the ingredients, soften the fish gelatin sheets in cold boiling water, soak the cherry blossoms in salt and drain them for later use

Put 1.5 pieces of fish film in the milk and melt it in hot water. Add sugar and set aside

Peel the dragon fruit, squeeze the juice and filter out impurities, leaving part of the juice for mirror use

Mix dragon juice and cooled milk liquid evenly

Beat the light cream until 70% fluffy and set aside

Wrap the bottom of the pie plate with tin foil

Slowly pour the juice into the light cream and stir into a fine mousse

Pour the mousse liquid into the pie plate until it is eighty full, leaving some space to make a mirror surface. Sorry if I forgot to take a photo at this step! Chill in the refrigerator for 2 hours. Melt the remaining 0.5 pieces of fish gelatin in hot water. After cooling slightly, pour it evenly on the refrigerated mousse. Decorate it with cherry blossoms and refrigerate it in the refrigerator overnight.
