Scrambled eggs with tomatoes (national dish: scrambled eggs with tomatoes)

I love my mother’s tomato and egg noodles the most. Whether it’s fried noodle soup or shaved noodles, I can eat two or three bowls in one sitting!

Take three eggs, add salt and mix well

Wash the tomatoes and cut them into small pieces (when we make it at home, we usually hold the tomato in the left hand and cut it directly into the bowl with a knife in the right hand)

Add vegetable oil to the pan and heat it up (more oil is needed)

After the oil is hot, pour in the egg liquid, let it solidify a little, then use a spatula to stir and stir-fry

Add the tomato cubes and a little soy sauce to adjust the color, and continue to stir-fry (the soy sauce is used to adjust the color and is optional)

Once the tomatoes soften and release some juice, it’s ready to serve!
