The flesh of white-skinned winter melon is not as thick as that of green-skinned winter melon, and the silk sac with seeds inside is not so tightly connected to the flesh of winter melon.

Peel the winter melon and cut into 5*5 cubes.

Cut at an interval of about 1 cm without cutting. The edge of the knife is about 1.5 cm away from the inner surface of the winter melon. Cut the winter melon into a pattern.

Heat oil in a pan and fry the winter melon piece by piece with the back facing down.

Fry for a while, then gently shake the pan until the underside of the winter melon turns brown.

Add water, light soy sauce and dark soy sauce and cook for a while. Don't use too much water, just enough to cover half of the winter melon. After the winter melon is cooked, add salt, chili powder, and oyster sauce.
