Stewed Lemon with Rock Sugar
Overview
It’s the season of autumn dryness again, and I happened to have a bag of old rock sugar that I opened for my own use. I was worried about how to use it up. Old rock sugar stewed with lemon can moisten the lungs and relieve coughs, and can also enhance immunity. To put it down to earth, it is perfect as the healthiest hot drink.

Wash the lemon with salt water and remove the stem.

Lemon slices.

Heat old rock sugar in the microwave for 1.5 minutes and break into small pieces.

Add appropriate amount of water to the stew pot, add sliced lemon slices and rock sugar, and bring to a boil over high heat.

After boiling, reduce heat to simmer.

Pay attention to the stewing process and stir, so as not to burn the pot. Simmer for about 2 hours until caramel color, OK.

Turn off the heat and let it sit for a while before bottling. The filled bottles need to be cleaned and scalded with boiling water.
