Stir-fried pork belly
Overview
The lean meat removed from the boiled elbow is a bit crumbly when eaten directly, so it is fried in oil and served with chili and garlic sprouts. It goes very well with rice

After the pork bones are cooked, remove the lean meat and cut into small pieces

Wash the green peppers and cut them into triangular pieces, wash and cut the Hunan peppers into sections, and cut the garlic sprouts into diamond-shaped sections (not photographed here)

Put oil in the pot, fry the deboned meat until half dry, set aside

Add the green pepper and garlic sprouts to the pan and stir-fry

Add the meat and stir-fry, add salt, light soy sauce, and sugar

Stir-fry for about half a minute and serve
