Cut the fresh bamboo shoots into shreds, rinse them in running water.

Cut the lean meat into strips, add light soy sauce, oil, and cornstarch and marinate for ten minutes. Stir-fry in a hot pan until cooked through and set aside.

Stir-fry shredded bamboo shoots and pickled vegetables in another pot for about three minutes. Add shredded pepper, salt and chicken essence.

Stir-fry until it changes color and add shredded pork.

Stir-fry for a while, then add cornstarch water to thicken it.
