Cut the potatoes into strips, not too thin, rinse with cold water 3 times, and soak for 10 minutes

Put it into a soup pot and cook until the water temperature reaches 80°C and the potatoes become slightly transparent.

Remove potatoes, soak in cold water, and drain. Add some starch and stir evenly.

Add a little more oil. After the oil is hot in the pan, add the potato strips and fry until the potatoes are dispersed. Add a little salt and continue to fry until the potato strips are slightly browned. Add salt and pepper and continue to stir-fry. After about a minute, remove from the pan and serve on a plate

Add shredded chili peppers and minced garlic to the remaining pot, stir-fry and pour onto the potato strips.
