Peel and core the apples and soak them in salt water for about half an hour.

Cut into small pieces, put in a food processor, add some water and blend

Pour into the pot and squeeze in lemon juice

Add rock sugar.

Fry dry. If you are using it to spread bread, you don't need to fry it very dry. I am using it for stuffing, so it is a little dry.

Put it into a bottle while it's hot, fill it up, invert it, and put it in the refrigerator when it's completely cool.
