Wash the peanuts and soak them in boiling water for two hours (no more than two hours, otherwise they will soak). Add salt, pepper and star anise to the boiling water.

After soaking, drain off the water, place in a baking pan, preheat at 200 degrees Celsius and bake for 8 minutes. Some peanuts may have cracks on their coats. Gently shake the baking pan to turn the peanuts over, then adjust the oven to 120 degrees for 5-8 minutes.

The taste is the same as the spiced peanuts served with wine back home in Northeast China, my husband’s favorite.
