Wash the fish and set aside

Remove the guts from the sheath and set aside

Heat the oil in the pot, add pepper, onion, ginger and garlic and sauté until fragrant

Add water and a little soy sauce

Put the fish into the pot. The soup should cover the fish. Add a little salt, sugar and a drop of vinegar and start to stew. After the pot is boiled, pour in a little cooking wine and simmer for ten minutes

It will take about ten minutes for the soup to dry up before adding the basil. The basil will change color after a minute or two and then turn off the heat.

Finally sprinkle in the chopped green onion and coriander
