Two pieces of matcha cake base (made from small mousse circles)

Place the cake slices into the mousse ring, and use a cake mold base to line the bottom with tin foil

125g of sugar-free homemade yogurt, add 25g of sugar and stir until the sugar melts

Soak 4 grams of gelatine in cold water until soft, add an appropriate amount of yogurt and melt in hot water

Mix the cooled gelatin liquid and yogurt evenly and pour into the mousse circle. Place it in the refrigerator to solidify for 25 minutes and take it out

In the same step, soak 4 grams of gelatine until soft, add yogurt and melt in water, let cool, pour into 125 grams of yogurt with 25 grams of fine sugar, mix well, add a drop of food coloring, mix well

Pour into the mousse ring and refrigerate for a few hours to solidify
