Fried carrots with eggs----delicious, I really didn’t believe it at first

I just learned this dish from my neighbor’s eldest sister years ago. The neighbor’s eldest sister often said that carrots fried with eggs were fried. Her eldest brother often ate this dish when he was in the army. However, I never believed that carrots fried with eggs were delicious, so I never fried it until my sister said she wanted to stir-fry this dish again. I was also curious about how delicious it was, so I came home and tried it quickly. The whole family tasted it in the evening and said it was really delicious, so I fried it with eggs as soon as I bought the carrots. Carrots are very nutritious, but the vitamins they contain are fat-soluble and must be combined with fat to be well absorbed. Therefore, eating them fried or stewed is more scientific than eating them cold. Since no meat is added, more oil is added when frying.

Cut carrots into shreds and set aside
