Wash the kumquats, soak them in light salt water for 1 hour, and then rinse them twice

Score the kumquat four or five times, flatten it, remove the seeds, or cut it in half.

Add rock sugar and lemon juice

Simmer in water for 1 hour

The stewed kumquats release a lot of juice, but the rock sugar has not completely melted. Cover the lid and leave it for a few hours

After a few hours, pour the kumquats into another pot and simmer over low heat until all the rock sugar melts
