Chop the large ribs you bought with the back of a knife to loosen the meat. Or a meat mallet would be even better.

Mix dark soy sauce and cooking wine, add 3 grams of salt and marinate the ribs for fifteen minutes.

Mix flour and cornstarch, and coat the marinated ribs with flour.

Heat oil in a pot until it boils slightly, add in large ribs and fry until golden brown.

Fried steak.

After the oil is poured out of the pot, add about three rice bowls of water, dark soy sauce and light soy sauce, and bring to a boil.

Put the fried pork ribs into the pot and cook.

After cooking for ten minutes, add 2 grams of salt and serve.
