Clean the spring fish and remove the intestines from the bottom of the head

Add cooking wine, salt, pepper powder, cumin powder, ginger, mix well

Add eggs, flour and water and mix well. The batter should be slightly thick enough to hang on the fish

Heat the oil in the pan, add the fish, fry one side till brown and turn the other side

Flip and fry until browned
