Golden mung bean sprouts
Overview
Bean sprouts are the most common vegetable on people's tables. It has a wide variety, comprehensive nutrition, unique flavor, fragrant and crispy texture, and is deeply loved by people. Bean sprouts form after germination, so bean sprouts are also called living vegetables. The nutritional value and nutrient utilization are also greatly increased. The most typical thing is that dry beans basically contain no vitamin C, but bean sprouts are very rich in vitamin C, which can maintain skin elasticity and are a good beauty product. However, although bean sprouts are rich in vitamin C and B vitamins, their content is unstable. The simplest way is to look at the long and short. Mung bean sprouts have the highest nutritional value when they grow to about one inch; after that, the longer they grow, the lower their vitamin C content. Bean sprouts have the highest nutritional value when eaten when they are about an inch thick.

Steps
-
Select mung beans: Remove damaged or moth-eaten mung beans, soak them in water for 5 hours in an empty bowl (if there are beans floating on the water, remove them and throw them away)
-
The beans after soaking are already very full. Prepare a clean and sterile leaky basket. If there are no new ones, you can clean them and blanch them in boiling water
-
Place a damp cloth on the bottom of the basket and spread the mung beans evenly on the cloth
-
Cover the mung beans with a wet cloth and place them in a backlit place to allow them to germinate. Water them every 4-5 hours. After about 12 hours, you can see that the beans have begun to germinate
-
After watering again, cover it with a wet cloth and put a 3-pound weight on the wet cloth (because there is no container of suitable size, so I filled the water with a bag)
-
After 36 hours, it has germinated to the state on the left, and after 48 hours, it has germinated to the state on the right. It needs to be watered every 4-5 hours. Try not to uncover the wet cloth on top. You can water directly from the cloth (I did it for taking pictures, as the bean sprouts tend to turn green when exposed to light). After watering, continue to put heavy objects on it
-
After 72 hours, it has sprouted and matured, about an inch long. Take the cloth out directly, and it will look like a blooming flower
