  1. Wash the pork ribs and blanch them in boiling water to remove the blood and minced meat. Onion, ginger, pepper and star anise are ready.

Put the oil in the pan, heat it to 6 or 7 minutes, add rock sugar (according to personal taste), melt the rock sugar until it just turns color (I don’t like to use rock sugar for coloring because the color is bright when the juice is reduced, and the taste is good), add the ribs and stir-fry, add a little cooking wine and stir well.

  4. Add scallions, ginger slices, star anise, and peppercorns and stir-fry evenly. Add dark soy sauce and light soy sauce and stir-fry evenly.

  5. Add cold water just enough to cover the ribs, bring to a boil over high heat, then turn to low heat. Simmer for 30-50 minutes. You can add salt after half an hour. Finally, use high heat to reduce the juice, and stir-fry constantly to reduce the mushy taste.
