Wash the fresh abalone, remove the belly and shell, and remove the mouth. Many dried abalones sold have mouths left in order to keep them intact and beautiful. If you eat it at home, it is more convenient to dispose of it in one go.

Abalone is cooked in salt water. Generally, a boiling pot will suffice, not necessarily a casserole.
