Crispy peanut candy

As a girl from the south of the Yangtze River, I really love sweets from the bottom of my heart. When I was drifting to the north, I often missed the taste of home, so I often made some to satisfy myself and LG (men from the Northeast). Fry the raw dried peanut kernels in a wok until cooked. I used ordinary peanuts, but actually red-skinned peanuts will taste better;

Take out the fried peanuts and let cool. It doesn’t matter if the peanuts are a little burnt, they will still be fragrant; at this time, clean the wok where the peanuts were just fried, dry them over fire and let them cool for later use;

When the peanuts are not hot to your hands, you can start to remove the peanut skins. You can break the peanuts in half as you go, so that the peanuts in the peanut candy can be distributed more evenly;

Put rock sugar and white granulated sugar in a wok (actually, you can use one of these two. I originally wanted to use white granulated sugar, but I realized it couldn’t be used when I poured it into the pot, so I had to get some more rock sugar);

Fry sugar over low heat;

You can add some honey when the rock sugar and white sugar are fried to a semi-melted state. On the one hand, the taste will be better, and on the other hand, the color of the peanut candy will also be better;

After all the sugar has been stir-fried, add the peanut kernels and stir together. Be sure to stir evenly so that the peanuts are coated with the syrup;

Place the stirred hot peanut candy on the cutting board and use a rolling pin to roll it to the appropriate thickness (note: there is no need to grease the cutting board, the sugar will not stick to the cutting board after it cools down);

The rolled peanut candy must be cut into pieces before cutting, because it will break easily after it is cooled. After cutting, just put it on a plate. It will be crispy and delicious~~~
