Small cubes of ancient cream, soft cake, long milky taste, satisfying in one bite.
Overview
Today I will make a simple cream cube, sweet cream, soft cake that melts in your mouth and has a long milky taste. It doesn't have a gorgeous appearance, but it has a soft texture and rich milky sweetness, which makes you satisfied in one bite.

Steps
-
eggs, separate the egg whites and egg yolks and set aside, freeze the egg whites for 10 minutes and set aside. 2. Then put 90 grams of low-gluten flour and 10 grams of corn starch together and sift them together to remove large particles and set aside. 3. Heat 60 grams of vegetable oil until the oil is in a rolling state and the temperature is around 70°C. Add it to the flour and stir until it is silky and has no particles.
-
Add 100 grams of yogurt (preferably thick yogurt) and continue to stir evenly.
-
Add 7 egg yolks in 2 portions.
-
Blend until smooth and without lumps.
-
Take out 7 frozen egg whites, add 6 grams of lemon juice, beat them slightly first, and make big fish eye bubbles.
-
grams of white sugar, add and beat in three stages. Add and beat in these three states: coarse foaming, medium foaming, and fine foaming.
-
Whip until the egg beater is lifted and the small elastic hook is used.
-
Take 1/3 of the egg white paste, add it to the egg yolk paste, and mix evenly.
-
Pour everything back into the protein paste and continue to mix evenly.
-
Use cutting and stirring techniques and stir about 20 times until the batter is even.
-
The 8-inch square mold is lined with oil paper in advance, and the batter is poured into the mold from a high place. (Note: Wrap the outer layer of the live bottom mold with a layer of tin foil to prevent water from leaking in during baking.)
-
Shake the mold to make the batter smooth, and shake it twice to remove any big air bubbles. Then use chopsticks to make several circles in the batter to remove large air bubbles.
-
Then put the batter mold into a large baking pan, pour half of the cold water, and put it in the oven.
-
Preheat the oven to 150°C in advance and bake for 70 minutes (note: after the surface of the baked cake is colored, cover it with a piece of tin foil so that the surface will not burn).
-
After baking, shake the cake twice to release the heat from the inside of the cake, then unmold and let cool.
-
Take 200 grams of whipping cream and 20 grams of fine sugar, whip until stiff, put into a piping bag and refrigerate until ready.
-
Cut the completely cooled cake into two slices across the middle.
-
The middle part may still be a little hot and needs to be completely cooled.
-
Spread the whipped cream evenly.
-
Smooth out the cream.
-
Stack another piece of cake on top and smooth the buttercream on all sides.
-
Refrigerate for 1 hour to set. Take out the shaped cake and cut it into small pieces.
