Steps
-
Prepare raw materials
-
Add all the ingredients A into a basin. Use chopsticks to stir until it becomes flocculent, and then knead it into a ball
-
Put the dough into the bread machine and start a 15-minute kneading program
-
After kneading the dough, cover it with a wrung-out wet cloth, start the automatic fermentation function of the bread machine, and ferment until it is 2-2.5 times in size
-
Tear the fermented medium-sized dough into small pieces and put it into the bread bucket, add ingredient B, start the kneading process, knead until the film can be pulled out, that is, the complete stage, roll it into a round ball and put it back into the bread machine. Continue to ferment for 15-20 minutes
-
After the dough is poured out and deflated, divide it into 8 equal portions, each portion is about 60-62 grams (my mold has exactly 8 small positions)
-
Shape into molds and place in an oven with a baking pan of hot water at the bottom for fermentation. The temperature should be controlled between 35-40°C. If the temperature is too low, activate the oven's built-in fermentation function (I forgot to take a picture of this one)
-
Ferment until doubled in size, brush with egg wash, quickly cut the surface of the dough 3 times with a blade, put it in a preheated oven at 175 degrees, bake for about 18 minutes, cover with tin foil after coloring (we don’t have a blade at home, so we use a sharp knife tip, just for the sake of appearance, you can bake it directly without this step)
-
When the finished product comes out of the oven, immediately remove it from the mold and let it dry until it is warm to your hands. Then seal it in a fresh-keeping bag. (Try not to eat freshly baked bread as it is not good for your stomach)
-
Look at how soft the middle seed is, break it apart
-
Pinch with two fingers
-
Relax and bounce back,
