Green plum sauce
Overview
I had some green plums left over from making green plum wine, and they turned a little yellow after being stored for two days. After much deliberation, I decided not to waste them and make some green plum jam.

Wash the green plums and soak them in water for two hours with two tablespoons of salt.

Grill the water, add green plums, add a spoonful of salt, and cook over low heat for 5 minutes.

Remove the plums and let cool.

Remove the core.

Put green plum meat and white sugar in a non-stick pan, add half a spoonful of salt, bring to a boil over high heat, then reduce to low heat and simmer for ten minutes.

Stir it from time to time until the water vapor has almost evaporated, then let it cool and bottle it. (The bottle must be water-free and oil-free)

Scoop a spoonful of green plum sauce and add an appropriate amount of warm water. It is sour and sweet with a slight bitter taste.

The soft and waxy plum pulp is very delicious.
