Dried mulberries and mulberry juice
Overview
It’s the season of eating mulberries again. Mulberries, a small and inconspicuous fruit, have very good effects! Folks have always said that mulberries in May are better than ginseng! The medicinal value and usage of mulberry are detailed in various medical classics such as "Compendium of Materia Medica". Mulberry has a sweet and cold taste, and has the functions of nourishing the liver and kidneys, promoting body fluids and moisturizing, and improving eyesight. Mulberries are delicious and nutritious, but unfortunately they are only available for a short time and are not easy to preserve. Then make some dried mulberries and drink a cup of mulberry juice! Let us work together to manually extend the shelf life of food!

Ingredients
Steps
-
Remove the stems of mulberries, wash them and drain them.
-
Put the mulberries and rock sugar together in a clean pot.
-
Bring to a boil over medium heat, no need to add water. Mulberries will produce a lot of water when boiled! After boiling, turn to low heat and simmer slowly, add two drops of lemon juice (optional), and stir constantly. Cook until the juice is noticeably reduced and becomes slightly thicker.
-
Take out the mulberries and squeeze out the water. You can put it through a mesh sieve and use a spoon to press out the water.
-
Spread the mulberries on the baking sheet and scatter them with your hands or chopsticks. Bake in the middle rack of the oven at 130 degrees for 60 minutes (the specific baking time will depend on the amount of mulberries and the degree of dryness and humidity).
-
Do not pour away the remaining soup in the pot. You can drink it directly. If you find it too sweet, you can add some boiling water. Super delicious and nutritious!
-
Just sprinkle some sugar on top of the roasted dried mulberries! It’s delicious even without the sugar! Store in a sealed container at room temperature.

I made a small amount this time and baked it for 60 minutes. The finished product was crispy and became slightly softer the next day. If you like a moister texture, you can shorten the baking time.
