Take an appropriate amount of flour and stir-fry over medium-low heat in a wok. Stir continuously to avoid burning the flour.

When the flour turns dark yellow, turn off the heat and take out the pan. Take out the flour and set aside.

Take an appropriate amount of fried flour and mix with an appropriate amount of ice water. The amount of flour is generally 3-4 medium spoons per person. The amount of water is just enough to dissolve the flour into a paste. It should not be too much or too thin.

When stirring, stir in the same direction to avoid lumps. Stir well and set aside.

Cut onions into segments and garlic into slices.

Put a little oil in the pot. When the oil is hot, add the onion and garlic and stir it a few times, then add boiling water. Note: Do not use too much oil, as it will make you greasy; over-oil the onion and garlic is fine, but do not burn them; the amount of boiling water is calculated based on the number of people, usually one bowl of boiling water per person.

After the water boils, slowly pour the flour mixed with cold water into the pot while stirring in the same direction. If you pour it directly without stirring, the noodle tea will not open and will be uneven.

After the previous step is completed, the noodle tea will bubble evenly and add an appropriate amount of salt. Stir it and it's ready to serve.
