Mini Coconut Naked Cake

The function of the broken wall food processor is very powerful. I have been tinkering with it since I got it. Today's mini naked cake is the result of tossing the broken wall food processor. Although the cream is delicious, it has a lot of calories and I don't like to eat it at ordinary times. But I like the aroma of coconut, so I put the coconut flakes into a food processor and pureed it, then spread it on the top of the small cake, and finally sprinkled some chopped dried kiwi and dried cranberries. The sweetness of candied coconut flakes is too strong, and it will be very greasy to puree it directly. I soaked the coconut flakes in water for half a day and changed the water several times until the sweetness subsided. Naked cakes have become popular in recent years. It means that there is no cream or frosting on the outer layer of the cake, and the materials in the cake layers are completely exposed in front of the guests. I baked some small carrot cakes today. Each cake was only 2 inches in size. I wanted to eat the cake in a different way, so I beat some coconut puree instead of cream and spread it on the cake layers. The cake was too small to fit fruit, so I put some dried fruits on top. This small cake is purely for fun. Although it lacks some fresh fruits from the real naked cake, it is still cute.

Prepare some two-inch cakes.

Soak the coconut flakes in cold water for an hour to remove the sugar, changing the water several times to avoid being too sweet.

Put the soaked coconut flakes into a food processor.

First use the instant function to hit twice, each time for about two seconds.

Then select the "Sauce" function to blend into a fine coconut puree.

Put the beaten coconut puree into a bowl and freeze it in the refrigerator for an hour.

Divide the small cake into three pieces, apply a layer of coconut puree on one piece of cake, then spread another layer of cake, and finish the whole thing in sequence.
