Steps
-
First of all, there must be bacteria, fresh yellow calf bacteria brought from Chuxiong Prefecture, Yunnan.
-
Just like picking vegetables, you also need to pick the mushrooms. Choose ones that are fresh and not soft to the touch, and peel off the soil at the roots of the mushrooms.
-
Wash the bacteria with a toothbrush under running water, slice them into pieces and put them in the microwave for 8 minutes. This step is to ensure that each piece of mushroom is ripe and non-toxic, and the bacteria that have evaporated excess water will taste more fragrant.
-
It’s time to stir-fry! The lard is first used to refine it in a hot pot. The combination of lard and bacteria will create a unique aroma. You can add more lard.
-
Add more garlic slices and a little dried chili pepper to the hot oil and sauté the bottom of the pot until fragrant.
-
Pour the mushrooms that have been cooked in the microwave into the pot and stir-fry over medium heat. During the stir-frying process, pay attention to making sure that every piece of fungus is cooked and not stuck to the walls of the pot.
-
Add salt and stir-fry until the mushrooms come out! Delicious! A delicacy that you can’t refuse in summer
