Stir-fried zucchini slices with oily meat
Overview
Prepare the oily pork slices in advance and slice the lean pork along the grain, soak in water for 10 minutes to remove the blood, remove and add salt, fresh ginger, soy sauce, cooking wine, chicken essence, water starch or egg white. Pour an appropriate amount of salad oil into the wok. When the oil turns red, stir-fry the meat until it turns white. Take it out and set aside.
