Prepare materials. (Take the eggs out of the refrigerator to warm up in advance, and sift the flour)

Prepare a slightly larger basin, break the eggs into the basin, and pour the fine sugar into it all at once. Take another larger basin, put hot water in it, and sit the egg beating basin in the hot water to heat it

Beat the eggs with a whisk in hot water

Continuously whisking, the egg liquid will gradually produce dense foam

The foam becomes thicker and thicker

When you lift the whisk, the lowered egg batter will not disappear immediately

Add the low-gluten flour in three batches and use a rubber spatula to carefully stir from the bottom up

Pour melted butter (or vegetable oil) into the mixed cake batter and continue to mix evenly.

Line a baking pan with parchment paper and pour all the cake batter into the baking pan

Smooth the cake batter, lift it up and shake it vigorously on the ground a few times to pop out the big air bubbles inside. Put the baking sheet into a preheated 180-degree oven for 15-20 minutes. Insert a toothpick into the inside of the cake. If there is no cake stuck to the toothpick after pulling it out, it means it is done.
