Bitter Melon Scrambled Eggs
Overview
Eating some bitter melon in summer is good for the body. Children don’t like to eat fried bitter melon, so frying it with some eggs can coax them to eat some bitter melon.

Clean the bitter melon, cut it in half and scoop out the flesh inside, then shred it and set aside. Slice the garlic and set it aside. I didn’t take a picture of the garlic.

Crack the eggs into a bowl and season with a little salt.

Put the pot on the fire and add oil. Break the eggs into the pot and fry them into small pieces.

Drain the scrambled eggs and set aside.

After frying the eggs, use the remaining oil in the pot to fry the bitter gourd. I don't like oily dishes, so I don't add any more oil after frying the eggs. If you feel that the oil is too little, you can add more. When the bitter melon is about to mature, add the scrambled eggs and mix evenly. Finally, add a little chicken essence and it's ready to serve.
